I think about food… a lot. I always plan. I usually know what everyone will be eating for lunch and dinner every night of the week; the week before! I know it’s nuts! But you are what you eat! Sometimes though, you just need something quick, healthy, and portable. I often grab a protein shake to go while I’m on the run…Heaven forbid my blood sugar drop! Last month I made a chocolate protein shake to go with big plans for the day. First the gym, then the grocery store. As I gathered all my things I popped my shake into the cup holder and headed out. While driving, I went to take a sip and…AHHHHH…it slipped and landed right in my lap! With chocolate shake streaming down my calves, I looked for a place to pull over. I was on a very busy two lane road and when I looked in my rear view mirror, I decided I better find a safer place to stop. I stepped on the gas and…more sloshing! Totally disgusted, I accelerated to find that safer spot, pulled over and then… Wheeeee yooooo wheeeee yooooo! With my one dry hand I pushed the button to roll down the window as the officer approached. When he came to the window, I gave a nod to direct his eyes to my “lap area” and sang “good morning!”

He said “well it looks like you are in a bit of a mess…. license and registration?” I replied “yes sir,” then turned and noticed my purse had been left behind. I leaned back in embarrassment and said “actually…. no sir, but I really appreciate you pulling me over because I was going to the grocery store without a wallet and that would not have been fun!”

He asked for my name, granted me permission to get out of the vehicle to clean up, disappeared and returned with not one, but two warnings! That sweet man was probably the only person that morning who knew that the brown liquid dripping down my legs while standing on the side of the road was chocolate protein shake! What a day…Shake, rattle and roll!

Ingredients
  1. 6 ounces unsweetened coconut milk
  2. 1 scoop high quality, minimal ingredient protein powder (whey from grass-fed cow, egg white, pea or rice)
  3. 1/2 cup frozen mixed berries or 4 - 5 fresh strawberries (stems on)
Instructions
  1. Combine and blend all ingredients
  2. Depending on the flavor of protein powder, you could add a frozen banana which goes well with cinnamon
  3. Be mindful of the type of fruit and how much you use to avoid spiking your blood sugar
Notes
  1. Serve with a smile for an extra good morning. Also goes well as a mid-morning or mid-afternoon
  2. snack.
