Popeye's Favorite Is Still Best With Olive Oil

  1. 3 cups fresh baby spinach
  2. 1 Tablespoon olive oil
  3. 1-2 cloves of garlic, halved
  4. Pink Himalayan salt and pepper to taste
  1. Add olive oil to a fry pan (that has a lid) on low heat
  2. Add the garlic and stir
  3. Add the spinach and cover to steam, keep on low to medium heat for 4-5 minutes or until wilted
  4. Remove from pan
  5. Drain any excess liquid
  6. Season with salt and pepper
  1. This vegetable is great served as a side or used as a bed to serve under chicken or fish.
