Ingredients

  • 3 cups fresh baby spinach

  • 1 Tablespoon olive oil

  • 1-2 cloves of garlic, halved

  • Pink Himalayan salt and pepper to taste

Directions

  • Add olive oil to a frying pan (that has a lid) on low heat
  • Add the garlic and stir
  • Add the spinach and cover to steam, keep on low to medium heat for 4-5 minutes or until wilted
  • Remove from pan
  • Drain any excess liquid
  • Season with salt and pepper

Notes

  • This vegetable is great served as a side or used as a bed to serve under chicken or fish.
