1 can organic pumpkin
2 Tbsp maple syrup
2 Tbsp grass fed butter
1 tsp grated ginger
1/2 tsp nutmeg
1 tsp cinnamon
pinch of salt
2 cups coconut milk
3/4 cup chia seeds
Directions
- Combine pumpkin, maple syrup, butter and all spices in a skillet to warm.
- Combine chia seeds and coconut milk in a separate bowl while pumpkin mixture is warming.
- Mix pumpkin mixture into chia seed mixture.
- Chill overnight.
Notes
- Portion into 1/4 cup servings for easy serving.
