  • 8 ounces pepper jack cheese

  • 2 ounces port salute or creamy french-style wheel

  • 2 Tablespoons heavy cream

  • 3 Tablespoons grass-fed butter

  • 8 eggs

  • 6 oz. Creme Fraiche (sour cream/yogurt combo can be substituted)

  • 1 cup purple onion, finely chopped

  • 1 cup colored bell peppers, finely chopped

  • 1 jalapeño pepper, finely chopped (optional for extra kick)

  • 1 cup kale, finely chopped

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • Coconut oil to grease silicone muffin pans

  • Mini muffin or full size muffin pans will work


  • Preheat oven to 350 degrees
  • In a small frying pan on low heat, melt the pepper jack and port salute (soft cheese) into 1 Tablespoon of butter and the heavy cream
  • When melted together remove from heat and set aside
  • In mixer, beat eggs with the creme fraiche on medium speed for 1-2 minutes
  • Add the melted cheese to the egg mixture
  • In a frying pan on low to medium heat sauté the onions for 2-3 minutes in 2 Tablespoons of butter
  • Add the peppers and sauté another 2-3 minutes
  • Shut the burner off and add the kale, parsley and cilantro to the peppers and onions and stir until well mixed together – about 1 minute (this step will release enough of the water in the greens to maintain the buttery color of the muffins)
  • Add the contents of the frying pan (onions, peppers, kale and fresh herbs) to the egg mixture and stir well
  • Grease the muffin pan with coconut oil
  • Pour in the egg mixture until cup is almost full (use a tablespoon for mini muffin pan and 1/4 cup for larger muffin pan)
  • Bake for 12-15 minutes for mini muffins and 20-22 minutes for full size muffins


  • Yields 24 mini muffins and 9 full sized muffins.
  • Serve the mini muffin sized bites as an appetizer or snack.
  • The full sized muffins are a great breakfast for home or on the go.
  • These are the perfect accompaniment to a nice hot bowl of soup.
