  1. 8 ounces pepper jack cheese
  2. 2 ounces port salute or creamy french-style wheel
  3. 2 Tablespoons heavy cream
  4. 3 Tablespoons grass-fed butter
  5. 8 eggs
  6. 6 oz. Creme Fraiche (sour cream/yogurt combo can be substituted)
  7. 1 cup purple onion, finely chopped
  8. 1 cup colored bell peppers, finely chopped
  9. 1 jalapeño pepper, finely chopped (optional for extra kick)
  10. 1 cup kale, finely chopped
  11. 1/4 cup fresh parsley, finely chopped
  12. 1/4 cup fresh cilantro, finely chopped
  13. Coconut oil to grease silicone muffin pans
  14. Mini muffin or full size muffin pans will work
  1. Preheat oven to 350 degrees
  2. In a small frying pan on low heat, melt the pepper jack and port salute (soft cheese) into 1 Tablespoon of butter and the heavy cream
  3. When melted together remove from heat and set aside
  4. In mixer, beat eggs with the creme fraiche on medium speed for 1-2 minutes
  5. Add the melted cheese to the egg mixture
  6. In a frying pan on low to medium heat sauté the onions for 2-3 minutes in 2 Tablespoons of butter
  7. Add the peppers and sauté another 2-3 minutes
  8. Shut the burner off and add the kale, parsley and cilantro to the peppers and onions and stir until well mixed together - about 1 minute (this step will release enough of the water in the greens to maintain the buttery color of the muffins)
  9. Add the contents of the frying pan (onions, peppers, kale and fresh herbs) to the egg mixture and stir well
  10. Grease the muffin pan with coconut oil
  11. Pour in the egg mixture until cup is almost full (use a tablespoon for mini muffin pan and 1/4 cup for larger muffin pan)
  12. Bake for 12-15 minutes for mini muffins and 20-22 minutes for full size muffins
  1. Yields 24 mini muffins and 9 full sized muffins.
  2. Serve the mini muffin sized bites as an appetizer or snack.
  3. The full sized muffins are a great breakfast for home or on the go.
  4. These are the perfect accompaniment to a nice hot bowl of soup.
