  1. 1/2 onion, diced
  2. 2 Tablespoons olive or coconut oil
  3. 1/2 green or red bell pepper, diced
  4. 4 eggs
  5. Splash of water
  6. Pink Himalayan salt and pepper to taste
  7. 1/2 cup fresh spinach
  8. 1/2 cup fresh kale
  9. Cheddar cheese, cut into thin strips
  1. Sauté the onion for 2-3 minutes in the oil
  2. Add the peppers and sauté another 2-3 minutes
  3. Beat the eggs in a bowl and add a splash of water, salt and pepper
  4. Pour the egg over the vegetables and allow to cook for 3-5 minutes
  5. Tilt the pan around to decrease liquid on top and allow it to cook up the sides of pan
  6. Place a plate large enough to cover the fry pan over the top, flip the omelet onto the plate and slide it back into the fry pan (uncooked side down)
  7. Turn heat down to low, place cheese strips on to look like spokes on a wheel
  8. Slide the omelet onto a plate and watch it disappear
  9. Do not be discouraged if you cannot "flip" it the first time. If it does not cooperate cut it into quarters and flip pieces individually. Eventually.... you will get the "wheel" rolling
  1. Serve for breakfast or any meal.
  2. Leftovers make a great sandwich.
