Papa’s Minestrone
Minestrone Soup
Serves 16
Hearty With Or Without Noodles

  1. 3 cups onion, diced
  2. 4 Tablespoons olive or coconut oil
  3. 2-3 cloves of garlic
  4. 2 Tablespoons pink Himalayan salt or more to taste
  5. 2 bunches collard greens, finely chopped
  6. 2 pounds tomatoes, quartered or a 24oz jar of diced tomatoes
  7. 3 cups carrots, chopped
  8. 3 cups celery, chopped
  9. 1 cup frozen organic peas
  10. Top with Pecorino Romano cheese and fresh pepper
  11. Noodles or meatballs are optional
  1. Use an 8 quart stockpot to sauté the onions in 2 Tablespoons of oil on low to medium heat
  2. Add garlic as the onions turn a golden brown
  3. Add tomatoes
  4. Stir and remove from heat
  5. Once onions are done, fill the stockpot 3/4 full with filtered water, add salt and stir
  6. Chop collards and add to pot
  7. Bring to a low boil for 30 to 35 minutes
  8. Add in the carrots and celery
  9. Simmer for 20 minutes then shut heat off
  10. Allow to cool a bit on the stove top
  11. Stir in peas last (to keep them fresh)
  12. Portion for meals, for your freezer and your sweet neighbor
  1. Goes well with stuffed mushrooms and a Caesar salad.
  2. Spaghetti squash or zucchini noodles are a great grain free substitute for a traditional grain based noodle here.
