Ingredients

  • 8-10 potatoes

  • 2-3 Tablespoons olive oil

  • Sprinkle of pink Himalayan salt

  • A sprig or two of fresh rosemary

Directions

  • Preheat oven to 375 degrees
  • Wash and cut potatoes into quarters (smaller red potatoes can be cut in half or left whole)
  • Put into a cast iron pot
  • Drizzle with olive oil
  • Sprinkle with salt
  • Strip the rosemary from the stem and add to potatoes
  • Toss all ingredients together, put a lid on the pot and roast in the oven for 1 hour
  • Can be done on a cookie sheet lined with parchment as well
