Ingredients

  • 6 slices sprouted grain toasted bread (check in your freezer section)

  • 5 -6 ripe room temperature tomatoes, sliced

  • 6 oz. raw or organic cheese

  • 3 Tablespoons pesto sauce

  • 2 -3 Tablespoons olive oil

  • Fresh cracked pepper

  • Fresh basil, chopped

  • Sprinkle of Pecorino Romano to garnish

Directions

  • Preheat oven to 350 degrees
  • Lay bread onto a cookie sheet lined with a silicone mat or parchment paper
  • Mix the pesto and olive oil together and spread on the bread
  • Top with cheese and tomato
  • Bake for 10 to 12 minutes
  • Garnish with cheese and basil
  • Cut in half or serve whole
