Open Faced Toasted Caprese Sandwich

6 slices sprouted grain toasted bread (check in your freezer section)
5 -6 ripe room temperature tomatoes, sliced
6 oz. raw or organic cheese
3 Tablespoons pesto sauce
2 -3 Tablespoons olive oil
Fresh cracked pepper
Fresh basil, chopped
Sprinkle of Pecorino Romano to garnish
Directions
- Preheat oven to 350 degrees
- Lay bread onto a cookie sheet lined with a silicone mat or parchment paper
- Mix the pesto and olive oil together and spread on the bread
- Top with cheese and tomato
- Bake for 10 to 12 minutes
- Garnish with cheese and basil
- Cut in half or serve whole
