  1. 1 butternut squash, peeled and cubed
  2. 1 small onion, shallot or combination of both, coarsely chopped
  3. 1/4 cup olive oil
  4. 1/2 teaspoon pink Himalayan salt
  5. 1 Tablespoon grass fed butter
  1. Preheat oven to 450 degrees
  2. Combine squash and onion, toss with olive oil and sprinkle with salt
  3. Bake for 20 minutes
  4. Remove from oven and mash with a potato masher
  5. Stir in butter and transfer to serving dish
