Ingredients

  • 1 butternut squash, peeled and cubed

  • 1 small onion, shallot or combination of both, coarsely chopped

  • 1/4 cup olive oil

  • 1/2 teaspoon pink Himalayan salt

  • 1 Tablespoon grass fed butter

Directions

  • Preheat oven to 450 degrees
  • Combine squash and onion, toss with olive oil and sprinkle with salt
  • Bake for 20 minutes
  • Remove from oven and mash with a potato masher
  • Stir in butter and transfer to a serving dish
