Mashed Butternut Squash

1 butternut squash, peeled and cubed
1 small onion, shallot or combination of both, coarsely chopped
1/4 cup olive oil
1/2 teaspoon pink Himalayan salt
1 Tablespoon grass fed butter
Directions
- Preheat oven to 450 degrees
- Combine squash and onion, toss with olive oil and sprinkle with salt
- Bake for 20 minutes
- Remove from oven and mash with a potato masher
- Stir in butter and transfer to a serving dish
