Ingredients
  1. Living culture or “S.C.O.B.Y.” (Symbiotic Culture Of Bacterial Yeast)
  2. 12 caffeinated organic tea bags (caffeinated green tea and Tulsi green tea work well)
  3. 1 gallon filtered water
  4. 1/4 cup previous batch or 1/4 cup organic apple cider vinegar (for first batch)
  5. 1 cup of organic cane sugar (“healthy” sugars do not ferment)
  6. Large stainless steel pot
  7. Wooden spoon
Instructions
  1. Bring water to a boil
  2. Add tea bags, stir and allow to steep for 20 minutes
  3. Remove tea bags and stir in sugar
  4. Use only a wooden spoon, do not allow any metal other than stainless steel to touch the mix
  5. Allow to cool completely, adding the S.C.O.B.Y. to hot water will kill it
  6. Pour into a large glass pitcher or jar and add the S.C.O.B.Y.
  7. Cover jar with cheese cloth or a paper towel and secure it with an elastic band around the lip
  8. Let it sit undisturbed in a dark room for 7-10 days
  9. The longer it sits, the less sweet it will be-the ninth day is consistently a good taste for me
  10. The S.C.O.B.Y. will reproduce
  11. Take the new S.C.O.B.Y. and place it covered in tea in a glass jar
  12. It will thicken as it is stored
  13. S.C.O.B.Y.'s can be used over and over
Notes
  1. Serve on ice and add whatever flavor you like.
  2. Citrus, berry fresh mint and fresh grated ginger are delicious.
