"Kom On" Try It..You Might Like It
Ingredients
- Living culture or “S.C.O.B.Y.” (Symbiotic Culture Of Bacterial Yeast)
- 12 caffeinated organic tea bags (caffeinated green tea and Tulsi green tea work well)
- 1 gallon filtered water
- 1/4 cup previous batch or 1/4 cup organic apple cider vinegar (for first batch)
- 1 cup of organic cane sugar (“healthy” sugars do not ferment)
- Large stainless steel pot
- Wooden spoon
Instructions
- Bring water to a boil
- Add tea bags, stir and allow to steep for 20 minutes
- Remove tea bags and stir in sugar
- Use only a wooden spoon, do not allow any metal other than stainless steel to touch the mix
- Allow to cool completely, adding the S.C.O.B.Y. to hot water will kill it
- Pour into a large glass pitcher or jar and add the S.C.O.B.Y.
- Cover jar with cheese cloth or a paper towel and secure it with an elastic band around the lip
- Let it sit undisturbed in a dark room for 7-10 days
- The longer it sits, the less sweet it will be-the ninth day is consistently a good taste for me
- The S.C.O.B.Y. will reproduce
- Take the new S.C.O.B.Y. and place it covered in tea in a glass jar
- It will thicken as it is stored
- S.C.O.B.Y.'s can be used over and over
Notes
- Serve on ice and add whatever flavor you like.
- Citrus, berry fresh mint and fresh grated ginger are delicious.
