The Salmon
  1. 1 filet of wild caught salmon
  2. 2 Tablespoons olive oil
  3. Pink Himalayan salt and pepper to taste
  4. 1/4 cup purple onion, chopped (optional)
  5. Lemon wedges for garnish
The Sauce
  1. 1/4 cup horse radish
  2. 1/4 cup Dijon mustard
  3. 1/4 cup fresh dill plus some for garnish
  1. Light the barbecue grill or preheat the oven to 400 degrees
  2. Thaw salmon and rub with olive oil, salt, and pepper
  3. Top with chopped onion (optional)
  4. Grill or oven roast on parchment paper lined cookie sheet for approximately 15 minutes (until done to your liking)
  5. Remove the skin, top with fresh dill and lemon slices
  6. Sauce: combine horse radish, Dijon mustard and dill in a bowl and stir
  1. Serve with lemon rice.
  2. Serve with the vegetable medley recipe.
