Ingredients

  • The Salmon
  • 1 filet of wild caught salmon

  • 2 Tablespoons olive oil

  • Pink Himalayan salt and pepper to taste

  • 1/4 cup purple onion, chopped (optional)

  • Lemon wedges for garnish

  • The Sauce
  • 1/4 cup horse radish

  • 1/4 cup Dijon mustard

  • 1/4 cup fresh dill plus some for garnish

Directions

  • Light the barbecue grill or preheat the oven to 400 degrees
  • Thaw salmon and rub with olive oil, salt, and pepper
  • Top with chopped onion (optional)
  • Grill or oven roast on parchment paper lined cookie sheet for approximately 15 minutes (until done to your liking)
  • Remove the skin, top with fresh dill and lemon slices
  • Sauce
  • combine horse radish, Dijon mustard and dill in a bowl and stir

Notes

  • Serve with lemon rice.
  • Serve with the vegetable medley recipe.
