Estelle’s Grilled Lemon Chicken

3 -4 pounds bone in chicken (breasts, thighs, legs)
1/2 cup olive oil
1/2 cup lemon juice
1 clove garlic, sliced
2 teaspoons dried Italian spices
1/4 cup chopped fresh basil and parsley
Pink Himalayan salt and pepper to taste
Directions
- Combine ingredients in a measuring cup and pour into a zipper bag
- Place chicken in bag and marinate up to 48 hours
- Grill until juice runs clear
Notes
- Goes great with Caesar salad and vegetable medley.
- You can substitute a white fish (Halibut) instead of chicken as well.
