  1. 2 cups grape tomatoes, quartered
  2. 2 cups cucumber, sliced and quartered
  3. 1 yellow pepper or 1/2 yellow 1/2 orange, diced
  4. 1/2 purple onion, sliced
  5. 3-4 oz. crumbled feta cheese
  6. 6-8 spiced kalamata olives
  7. 1/4 cup olive oil
  8. Juice of 1 lemon
  9. 1 package fresh dill, chopped
  10. Pink Himalayan salt and pepper to taste
  11. Lettuce can be added to make it a larger salad
  1. Cut the vegetables into bite size pieces
  2. Mix together and add the oil, lemon juice, dill, salt & pepper
  3. Top with feta and olives then lightly toss
  1. If there is no lettuce, this will keep a couple days and is a fresh addition to lunches
