Write a review
  1. 12 pieces sprouted grain cinnamon raisin bread, crusts removed (Ezekiel Brand or other)
  2. 6 ounces cream cheese, softened
  3. 6 eggs, beaten
  4. 4-6 ounces milk (coconut or almond milk can be substituted)
  5. 1 Tablespoon vanilla
  6. 1/2 teaspoon cinnamon
  7. 2 cups homemade granola for topping
Garnish With
  1. Fresh fruit
  2. Yogurt
  3. Maple syrup
  1. Grease a 9x13 glass baking dish with coconut oil
  2. Cut crusts off the bread
  3. Spread each piece with cream cheese
  4. Arrange the bread in the pan
  5. Place second piece of bread on top of the first, cream cheese side up (there should be two layers)
  6. Beat eggs, milk, vanilla and cinnamon together
  7. Pour over the bread
  8. Cover and refrigerate overnight
  9. In the morning, bake covered at 350 degrees for 30 minutes
  10. Remove cover, spread granola over the top and bake loosely covered for another 10 minutes
  11. Remove cover to allow the granola to crisp up for a few minutes longer
  1. Allow to cool, cut into squares and serve.
  2. Yields 10 servings.
  3. Top with a drizzle of yogurt, pure maple syrup, and fresh berries.
  4. This can also be cut into strips and be dipped in maple syrup.
