Ingredients
  1. 4 medium onions, diced
  2. 4 cups diced tomatoes
  3. 2-3 cloves garlic, minced
  4. 1/2 yellow pepper, diced
  5. 1/2 red pepper, diced
  6. 1/2 green poblano pepper, diced
  7. 1-2 jalapeño peppers, diced (mild or medium)
  8. 4 oz. apple cider vinegar
  9. 2 Tablespoons fresh cilantro, finely chopped (additional to garnish)
  10. 2 teaspoons pink Himalayan salt
  11. 1-2 oz. tomato paste
Instructions
  1. Preheat the oven to 400 degrees
  2. Roast the onions, tomatoes, garlic and peppers on a cookie sheet lined with parchment paper for 30 minutes
  3. Pour vinegar into small stock pot on medium heat
  4. Add roasted veggies, fresh cilantro, salt and simmer for 30 minutes
  5. Add tomato paste and simmer uncovered for another 1 to 2 hours
  6. Remove from heat based on desired thickness
  7. Add fresh cilantro (optional)
  8. This can be jarred and stored in your pantry for the unexpected, yet always welcomed guest!
Notes
  1. Serve with nachos, top sandwiches and burgers or use it as a dip for crackers.
  2. The flavor is robust enough that it can also be used as a tapenade.
