Ingredients

  • 4 medium onions, diced

  • 4 cups diced tomatoes

  • 2 -3 cloves garlic, minced

  • 1/2 yellow pepper, diced

  • 1/2 red pepper, diced

  • 1/2 green poblano pepper, diced

  • 1 -2 jalapeño peppers, diced (mild or medium)

  • 4 oz. apple cider vinegar

  • 2 Tablespoons fresh cilantro, finely chopped (additional to garnish)

  • 2 teaspoons pink Himalayan salt

  • 1 -2 oz. tomato paste

Directions

  • Preheat the oven to 400 degrees
  • Roast the onions, tomatoes, garlic and peppers on a cookie sheet lined with parchment paper for 30 minutes
  • Pour vinegar into small stock pot on medium heat
  • Add roasted veggies, fresh cilantro, salt and simmer for 30 minutes
  • Add tomato paste and simmer uncovered for another 1 to 2 hours
  • Remove from heat based on desired thickness
  • Add fresh cilantro (optional)

Notes

  • This can be jarred and stored in your pantry for the unexpected, yet always welcomed guest!
  • Serve with nachos, top sandwiches and burgers or use it as a dip for crackers.
  • The flavor is robust enough that it can also be used as a tapenade.
