4 medium onions, diced
4 cups diced tomatoes
2 -3 cloves garlic, minced
1/2 yellow pepper, diced
1/2 red pepper, diced
1/2 green poblano pepper, diced
1 -2 jalapeño peppers, diced (mild or medium)
4 oz. apple cider vinegar
2 Tablespoons fresh cilantro, finely chopped (additional to garnish)
2 teaspoons pink Himalayan salt
1 -2 oz. tomato paste
Directions
- Preheat the oven to 400 degrees
- Roast the onions, tomatoes, garlic and peppers on a cookie sheet lined with parchment paper for 30 minutes
- Pour vinegar into small stock pot on medium heat
- Add roasted veggies, fresh cilantro, salt and simmer for 30 minutes
- Add tomato paste and simmer uncovered for another 1 to 2 hours
- Remove from heat based on desired thickness
- Add fresh cilantro (optional)
