Write a review
  1. Coconut oil to grease muffin tin
  2. 12 farm fresh eggs
  3. 6 Tablespoons cream (coconut cream can be substituted for a dairy free option)
  4. 6 teaspoons fresh herbs (basil, dill, cilantro etc.)
  5. 12 teaspoons grated cheese (optional)
  6. Pink Himalayan salt and pepper to taste
  1. Preheat oven to 350 degrees
  2. Grease a muffin tin with coconut oil
  3. Crack 1 egg into each muffin tin cup
  4. Top with 1/2 teaspoon of cream, herb of choice, cheese and a sprinkle of salt & pepper
  5. Bake for 10-12 minutes or to desired softness
  1. The Italian: Tomatoes, mozzarella and fresh basil
  2. The Southwestern: Black beans, pepper jack and cilantro
  3. Serve with whole grain toast or a sprouted grain english muffin topped with cream cheese
  4. Sliced tomatoes drizzled with olive oil and sprinkled with salt and pepper make a great side
