Ingredients

  • Coconut oil to grease muffin tin

  • 12 farm fresh eggs

  • 6 Tablespoons cream (coconut milk can be substituted for a dairy free option)

  • 6 teaspoons preferred fresh herb (basil, dill, cilantro etc.)

  • 12 teaspoons grated cheese (optional)

  • Pink Himalayan salt and pepper to taste

Directions

  • Preheat oven to 350 degrees
  • Grease a muffin tin with coconut oil
  • Crack 1 egg into each muffin cup
  • Top with 1/2 teaspoon of cream, herb of choice, cheese and a sprinkle of salt u0026 pepper
  • Bake for 10-12 minutes or to desired softness

Notes

  • The Italian: Tomatoes, mozzarella and fresh basil.
  • The Southwestern: Black beans, pepper jack and cilantro.
  • Serve with whole grain toast or a sprouted grain english muffin topped with cream cheese.
  • Sliced tomatoes drizzled with olive oil and sprinkled with salt and pepper is another great side.
