Coconut oil to grease muffin tin
12 farm fresh eggs
6 Tablespoons cream (coconut milk can be substituted for a dairy free option)
6 teaspoons preferred fresh herb (basil, dill, cilantro etc.)
12 teaspoons grated cheese (optional)
Pink Himalayan salt and pepper to taste
Directions
- Preheat oven to 350 degrees
- Grease a muffin tin with coconut oil
- Crack 1 egg into each muffin cup
- Top with 1/2 teaspoon of cream, herb of choice, cheese and a sprinkle of salt u0026 pepper
- Bake for 10-12 minutes or to desired softness
Notes
- The Italian: Tomatoes, mozzarella and fresh basil.
- The Southwestern: Black beans, pepper jack and cilantro.
- Serve with whole grain toast or a sprouted grain english muffin topped with cream cheese.
- Sliced tomatoes drizzled with olive oil and sprinkled with salt and pepper is another great side.
