  1. 3 cups rolled oats
  2. 3 cups steel cut oats
  3. (Omit oats for a grainless option)
  4. 1½ cups whole raw almonds
  5. 3 cups unsweetened shredded coconut
  6. 1 cup pumpkin seeds
  7. 1 cup sunflower seeds
  8. 1/2 cup chia seeds
  9. 1/2 cup hemp seeds
  10. 1 cup sesame seeds
  11. 1 cup flax seeds
  12. 1 teaspoon pink Himalayan salt
  13. 1/2 cup virgin coconut oil
  14. 1/2 cup raw honey (real honey crystallizes)
  15. 1/2 cup dried fruit (optional)
  16. 1/2 teaspoon cinnamon (optional)
  1. Preheat oven to 350 degrees
  2. In a large bowl combine oats, almonds, coconut, seeds, and salt
  3. In a small sauce pan on low, liquify the coconut oil and honey
  4. Pour coconut oil/honey mixture over oat mixture and stir until combined well
  5. Scoop onto cookie sheets lined with parchment paper - do not overfill
  6. Bake for 15 minutes
  7. You may want to toss half way through to prevent the edges from overcooking
  8. Remove and allow to cool
  9. Add dried fruit (optional) and store in airtight containers
  1. This is a large recipe. You can reserve a cup or 2 and turn them into power balls by using honey and nut butter to bind the mixture together. Adding mini chocolate chips make this a sweet treat. Form into balls and refrigerate.
  2. Serve for breakfast as a substitute for breakfast cereal, layer with fresh berries and yogurt, making it the perfect parfait or top a french toast casserole for the added crunch.
