Sit Down Mom, The Kids Can Do These
Ingredients
- 2 pasture raised eggs
- 1 cup coconut sugar
- 2 cups almond butter (or any other nut butter)
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 cup dark chocolate chunks or chips
- 1/4 cup flax seed (optional)
Instructions
- Preheat your oven to 350 degrees
- In a large bowl add the eggs and the sugar, mix well
- Add the almond butter, vanilla, baking soda and stir until well blended
- Add in the chocolate bits and stir
- Add in the flax seed (optional)
- Spoon onto a cookie sheet lined with parchment paper
- Bake for 10-12 minutes
- Allow to cool for 10 minutes on the baking sheet before transferring to wire rack (if you skip this step, the cookies may fall apart)
- Allow to cool completely on wire racks before storing

- These freeze well.

Mark wanted to turn these into Cookies for Adults so he suggested adding cayenne pepper. I LOVE spicy chocolate. I added about a teaspoon, which made them pretty spicy yet still delicious. I think anywhere from 1/2-1 tsp would work.
