  1. 2 pasture raised eggs
  2. 1 cup coconut sugar
  3. 2 cups almond butter (or any other nut butter)
  4. 2 teaspoons vanilla
  5. 1 teaspoon baking soda
  6. 1 cup dark chocolate chunks or chips
  7. 1/4 cup flax seed (optional)
  1. Preheat your oven to 350 degrees
  2. In a large bowl add the eggs and the sugar, mix well
  3. Add the almond butter, vanilla, baking soda and stir until well blended
  4. Add in the chocolate bits and stir
  5. Add in the flax seed (optional)
  6. Spoon onto a cookie sheet lined with parchment paper
  7. Bake for 10-12 minutes
  8. Allow to cool for 10 minutes on the baking sheet before transferring to wire rack (if you skip this step, the cookies may fall apart)
  9. Allow to cool completely on wire racks before storing
  1. These freeze well.

    Mark wanted to turn these into Cookies for Adults so he suggested adding cayenne pepper. I LOVE spicy chocolate. I added about a teaspoon, which made them pretty spicy yet still delicious. I think anywhere from 1/2-1 tsp would work.
