Ingredients
  1. 4 pounds fresh tomatoes, diced
  2. 2 (8 oz.) packages white mushrooms
  3. 2 large onions (yellow, purple or mixed), cut in half then thinly sliced
  4. 6 Tablespoons olive oil
  5. 2 Tablespoons red wine vinegar
  6. Pink Himalayan salt and pepper to taste
  7. 2 whole chickens, cut into pieces (bone in, skin on)
  8. 1 bunch fresh basil (plus some for garnish)
  9. 1/4 cup fresh parsley
  10. 2-3 cloves garlic, chopped
  11. 4 (24 oz.) jarred tomatoes, crushed or diced
  12. 4 Tablespoons capers
  13. 1 cup red wine
  14. Top with Pecorino Romano cheese
Instructions
  1. Preheat oven to 400 degrees
  2. Line 2 cookie sheets with parchment paper
  3. In a large bowl, combine diced fresh tomatoes, mushrooms and onions
  4. Add 3 Tablespoons of the olive oil, add vinegar, salt and pepper
  5. Evenly distribute onto cookie sheets
  6. Bake for 50 minutes
  7. Remove and set aside
  8. Turn oven to broil
  9. Arrange chicken pieces in a large baking dish
  10. Season with olive oil, salt and pepper
  11. Broil until chicken skin has browned on both sides
  12. Remove and set aside (chicken will not be cooked through)
  13. In an oven proof stockpot on low heat, cover the bottom with olive oil (about 2 Tablespoons), add salt and pepper to taste, basil, parsley, and chopped garlic
  14. As soon as you get the garlic aroma, add jarred tomatoes and capers
  15. Increase heat to medium, add red wine and allow to simmer
  16. When the fresh tomatoes, onions and mushrooms have roasted, add to the stockpot
  17. Reduce oven temperature to 350 degrees
  18. Use tongs to add the chicken pieces to the stockpot
  19. Place stockpot in oven and bake at 350 uncovered for 30 minutes (the chicken should reach 160 degrees or more)
  20. Reduce oven temperature to 250 degrees and simmer for 1½ to 2 hours
Notes
  1. If serving later in the week, you can simmer before serving. This dish can also be simmered on low in a crock pot.
  2. Serve with pasta or oven rosemary potatoes and a fresh salad. For a grainless option, zucchini pasta with broccoli or rapine is a great combination.
