Just Because It Looks Like A Potato... Doesn't Mean It Is

  1. 1 head of cauliflower, cut into florets
  2. 1-2 garlic cloves
  3. 2-3 Tablespoons butter
  4. Pink Himalayan salt and pepper to taste
  1. Add cauliflower and garlic to a sauce pan, cover in water
  2. Boil on the stove top until soft
  3. Drain all water and put into a glass bowl
  4. Season with butter, salt and pepper
  5. Mash with a potato masher to desired consistency
  1. Accompanies any protein, especially steak.
  2. Variations can include scallions.
