3 eggs
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup hemp seeds
1/4 cup flax seeds
1 teaspoon pink Himalayan salt
1/2 teaspoon garlic powder
1 Tablespoon mixed dried Italian spices
Up to 1 Tablespoon fresh herbs can be added (optional)
1 teaspoon olive oil
Directions
- Combine eggs, seeds, spices/herbs, garlic powder and salt and oil in a bowl
- Stir well
- Use a spatula to transfer the mixture onto a cookie sheet lined with a silicone mat or parchment paper
- Shake the cookie sheet and tilt it around until the mixture is spread across the cookie sheet
- Option 1
- Bake at 400 degrees for 10 minutes.
- Remove and cut into squares with a pizza wheel.
- Return to oven for 5-8 more minutes
- Option 2
- Bake at 400 degrees for 15-18 minutes or until crispy.
- Remove, allow to cool and break into pieces
Notes
- Seeds may be ground before mixing with eggs and oil
- Dip in a sunny side up egg for a savory crunch.
- Picture above shows crackers made with sesame and flax. Use mixed seeds of your choice, just measure the seeds to make up 1 and 3/4 cup to a 3 egg ratio. Be creative and enjoy.
