Ingredients

  • 1 cup fresh or frozen blueberries

  • 2 bananas (peeled and sliced)

  • 2 pasture raised eggs

  • 1 cup plain yogurt (coconut yogurt can be substituted for a dairy free option)

  • 1/2 cup coconut flakes

  • 1 cup gluten free oats

  • 1/2 cup steel cut oats (1/2 cup gluten free oats may be substituted here)

  • 1/3 cup maple syrup

  • 1/4 cup hemp seeds

  • 1 tsp vanilla

  • 1/2 tsp Himalayan salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 cup chopped walnuts (omit for a nut-free option)

Directions

  • Preheat your oven to 350 degrees.
  • Add the bananas, eggs, yogurt, coconut flakes, oats, maple syrup, vanilla, salt, baking soda u0026 baking powder to your blender.
  • Blend until smooth
  • Stir in blueberries, hemp seeds and walnuts to the blended mixture.
  • Pour the batter into greased muffin tins or papers.
  • Bake at 350 degrees for 20-25 minutes.
