Apple Pie Chia Pudding

2 apples, diced
2 Tbsp maple syrup
1 tsp grated ginger
1/2 tsp nutmeg
1 tsp cinnamon
pinch of salt
2 cups coconut milk
1/2 cup chia seeds
Directions
- Combine apples, maple syrup, and all spices in a skillet to warm.
- While ingredients are warming, combine chia seeds and coconut milk in a separate bowl.
- Combine the ingredients from the skillet into the chia seed mixture.
- Chill overnight.
Notes
- Portion into 1/4 cup servings to make for easy serving
