- 2 cups grape tomatoes, quartered
- 2 cups cucumber, sliced and quartered
- 1 purple onion, sliced
- 1/4 cup olive oil
- 1 Tablespoon apple cider vinegar
- Juice of 1 lemon
- Pink Himalayan salt and pepper to taste
- Cut the vegetables into bite size pieces
- Mix together and add the oil, vinegar, lemon juice, salt & pepper
- Toss and enjoy
