Tomato Cucumber Salad

  1. 2 cups grape tomatoes, quartered
  2. 2 cups cucumber, sliced and quartered
  3. 1 purple onion, sliced
  4. 1/4 cup olive oil
  5. 1 Tablespoon apple cider vinegar
  6. Juice of 1 lemon
  7. Pink Himalayan salt and pepper to taste
  1. Cut the vegetables into bite size pieces
  2. Mix together and add the oil, vinegar, lemon juice, salt & pepper
  3. Toss and enjoy
